I may call this the final piece because I have a cake coming up and the deadline for both is like the same day. There's more I want to do.. but I get so distracted easily. Not like I'll win this contest anyway.. but.. ::shrugs:: I worked pretty hard on this. x_x

Progress on the yordle


Doing this completely by mouse. Sometimes, I want to pull my hair out. x.x

Peanut butter balls

So, I decided to make some peanut butter balls.. around 70 to be exact.


Peanut Butter Balls (recipe from Joy of Baking)
2 cups creamy peanut butter
1/4 cup unsalted butter, room temperature
1/4 teaspoon salt (optional)
1/2 teaspoon pure vanilla extract
2 - 2 1/2 cups powdered sugar


Chocolate Coating
9 ounces semi sweet chocolate, coarsely chopped
1 tablespoon shortening

Directions
Line two baking sheets with parchment or wax paper.

Place the peanut butter, unsalted butter, and salt in a microwaveable bowl, and heat in the microwave for about one minute or until just soft (check and stir the ingredients every 20-30 seconds). Stir in the vanilla extract and powdered sugar and mix until it has the consistency of a stiff dough (add more sugar if necessary).

Roll the dough into 1 inch round balls. Place on the cookie sheets and refrigerate until firm (several hours or even overnight). You can also place the peanut butter balls in the freezer and freeze until firm (I find this makes it easier to dip them in the melted chocolate).

Melt the chocolate and shortening in a heatproof bowl placed over a saucepan of simmering water. Dip the balls, one at a time, in the melted chocolate, making sure the entire ball is coated with chocolate. Then, with two spoons or a dipping fork, remove the peanut butter ball from the melted chocolate, allowing any excess chocolate to drip back into the bowl. Place the chocolate covered balls back on the baking sheet. If desired, sprinkle the balls with finely chopped peanuts. When all the balls have been dipped in the chocolate, place in the refrigerator until the chocolate has set. 

Store in an airtight container for up to two weeks. They can also be frozen. Makes about 60 pieces, depending on size. 

Of course, I drizzled melted vanilla chips over some of mine to make them look fancy.

Would I use this recipe again? Probably not. Too sweet for me. x_x I would only make upon request or look for another recipe, even though this one was very easy.

Coming up..

I have a dinosaur baby shower cake in early February.

But between now and then, I'm going to attempt to make pound cake from scratch with chocolate truffle and raspberry filling. It's going to be super tempting to eat this. BUT I WILL NOT. [insert some sort of willpower here x.x]

And of course, Oreo truffles. Drizzled in white chocolate and topped with cookie crumbs.. Bet you can't eat just one. ;D 

Plans, plans.. Hopefully I can stick to them.

Currently, my town is under winter weather advisory and that called for some chili.. so I made two pots full. Mmm. <3

Happy New Year!

It's a new year.. so I figured I'd show a new photo of myself. As in, taken 10 minutes ago? o.o Sigh. No pretty hair color. I'm all bland.

(By tomorrow, I am going to decide I hate this picture. >.<)
